Southern Chicken Liver Dressing

SOUTHERN STYLE CHICKEN LIVER DRESSING

INGREDIENTS

· 4 c breadcrumbs (from leftover bread not storebought if possible)

· 1 lg onion, chopped

· 1 c celery, chopped

· 1 ear corn kernels

· 1/2 c butter

· 3 c chicken stock

· 2 c cornbread crumbs

· 6 eggs

· 1 lb chicken livers

· 1 tblsp thyme

· 1 tblsp sage

· 1 lg parsnip, grated

PREPARATION INSTRUCTIONS

1) Let white bread sit overnight on counter

2) Saute onion, corn, & celery in butter till soft

3) Simmer livers in chicken stock till cooked, remove from stock, cool

4) Mix breadcrumb, cornbread, vegetables, herbs, & eggs together

5) Chop livers finely, then add to bread mix and pour over the chicken stock that was used to cook them in

6) Add grated parsnip

7) Bake in greased pan at 350 till done
