Seared Bourbon Thighs

SEARED BOURBON THIGHS WITH SAUTEED MUSTARD GREENS & SWEET POTATO PUREE

INGREDIENTS

  • 1 pound Springer Mountain Farms Boneless Skinless Chicken Thighs
  • Salt, pepper, smoked paprika (to season chicken)
  • 4 cups water
  • 1 cup grits
  • 1 cup diced sweet potato
  • ¼ cup butter
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne
  • ¼ teaspoon chili powder
  • 2 Cups mustard greens
  • 1 cup Chow Chow

PREPARATION INSTRUCTIONS

  1. While boiling water, add grits slowly making sure to stir them to avoid lumps (very important)
  2. Dice sweet potato and add to boiling water at same time
  3. Add ¼ cup butter
  4. Salt, pepper, smoked paprika, cayenne, chili powder
  5. In hot cast iron skillet,
  6. Season BLSL chicken thighs with salt and pepper, smoked paprika, salt and pepper
  7. Add oil and heat cast iron skillet
  8. When pan hot, add chicken and let cook until crispy (6-8 minutes)
  9. Turnover and cover with lid.
  10. Cook 10-12 minutes or until cooked through.
  11. Add bourbon and butter to finish.
  12. Remove from pan and set aside
  13. Saute mustard greens in separate pan until wilted
  14. Chop into large julienne slices and fold into chow chow
