Herb-brined Roasted Chicken

INGREDIENTS

  • 1 gal cold water
  • 1 cup white vinegar
  • 1 cup lemon juice
  • 1/2 cup honey
  • 3/4 cups kosher salt
  • 1 tbsp. black peppercorns
  • 6 sprigs of rosemary cleaned
  • 6 bay leaves
  • 15 leaves of fresh sage
  • 15 cloves garlic
  • 1 yellow onion
  • 3 lb. whole chicken

PREPARATION INSTRUCTIONS

  1. Blend all ingredients in a blender.
  2. Place the whole chicken in brine for 6-8 hours.
  3. Set oven temperature at 350F and place chicken in oven to roast. Let the chicken cook at that temperature for about an hour.
