Chicken Stock

INGREDIENTS

  • whole chicken, bones only
  • 1 head of celery
  • 2 onions
  • 2 carrots
  • 1 head of parsley
  • bunch of thyme
  • 10 cloves of garlic, peeled
  • 6 bay leaves
  • 20 peppercorn
  • water to cover

PREPARATION INSTRUCTIONS

  1. Add a bit of water into the pot and put on medium heat.
  2. Add chicken frames into pot.
  3. Cut celery and add into pot, setting the base to the side.
  4. Peel and cut onions in half and add into pot.
  5. Peel and cut carrots into 1 in pieces and add into pot, setting the base to the side.
  6. Throw away celery and carrot bases.
  7. Add parsley, stem and all.
  8. Add thyme, stem and all.
  9. Add garlic cloves.
  10. Add bay leaves and peppercorn.
  11. Cover with cold water and simmer for 4 hours.
  12. Enjoy!
