Fraised Wings

Ingredients

  • 2 qt chicken stock
  • 12 wings
  • 1 cup tapioca starch
  • 1 cup hot sauce
  • 1/2 cup cream
  • 1/2 lb butter
  • 1/2 cup blue cheese crumbs
  • scallion or parsley to garnish

Preparation Instructions

  1. Place wings in oven friendly pan.
  2. Cover wings in stock and tightly wrap pan in foil.
  3. Bake at 300°F for 2-3 hours.
  4. Cool in liquid.
  5. Add oil into bowl and place on high heat.
  6. Remove wings from liquid and pat dry with paper towel.
  7. Dredge wings in tapioca starch and shake off excess.
  8. Fry at 350°F for 2-3 minutes until just crispy on outside.
  9. While chicken is cooking, in a hot pan, bring hot sauce and cream to boil until nappe.
  10. Turn off heat, whisk in butter to emulsify.
  11. Remove wings and salt.
  12. Plate wings, drizzle with sauce, crumble cheese over and sprinkle the herbage.
