Dijon Chicken Thigh

Ingredients

Chicken

  • 2 lb chicken thighs
  • 1 cup dijon
  • 1/2 cup honey
  • 1/2 cup hot sauce
  • 2 cups cornmeal

Polenta

  • 1 cup good quality polenta
  • 3 cups milk
  • 1/2 stick butter
  • salt
  • chives

Roasted Mushrooms

  • 1 lb oyster shrooms
  • 1 head greens
  • 1/2 stick butter
  • 3 tbsp olive oil
  • 1/2 cup brandy
  • 2 cloves garlic, slivered
  • 1 tsp chili flake
  • 1 red onion, diced

Preparation Instructions

  1. Mix dijon, honey, hot sauce to make marinade.
  2. Marinade thighs for at least four hours.
  3. Put pan over medium high heat.
  4. Take chicken thigh, shake excess marinade off.
  5. Place chicken thighs into cornmeal, cover well, then shake off excess.
  6. Put chicken thighs into pan laying it down away from you.
  7. Cook chicken thighs until internal temperature is 165F.
  8. Make polenta and roasted oyster mushrooms.
  9. Plate the dish and enjoy!
